Some good advice here, except for taking care of a friends kids. Taking care of other's kids is nothing like caring for your own.

I think you owe her the truth so she can get closure and stop wondering what went wrong.
Welll you kinda are dumping your fiancé because of the revelation so I won’t worry about it. This person is signaling a big change in their life and you absolutely are not obligated to go along with it. I wouldn’t be cruel but I wouldn’t lie about the reason. Obviously they are changing the dynamics a lot so it’s on them.
