I concur with others. Her unblocking this guy because of an argument shows a particularly petty and disrespectful way of treating you.
Just for shits and giggles tell her you’re unblocking all those women you’ve blocked, just to see her reaction.
But seriously, I’d be rethinking this relationship.
Talk to her, tell her that this guy you used to work with said he sees her in his restaurant once a week and see what she says. You don't have to go in with accusations just ask

There's not much of a future with someone that doesn't want to fit you into their life.
It’s really up to you, but know that you don’t HAVE to. He’s not your responsibility. He neglected to informed you if his illness and chances are he was off his meds on this trip, which is irresponsible and dangerous, to him and the people around him. That is on him.
You shouldn’t have to see someone who traumatized you just because you miss when things were good.

They were invited together; she says in a comment that she communicated with him that she was excited for the concert and was looking forward to connecting. If he decides to go alone it sends a message that he does not want to connect/spend time with her.
I can't speak to her motivations; it is possible that she laid down the ultimatum to manipulate him. It's also possible she did it for her own mental health. There's only so many times that someone can show you they don't care before you give up.
