Surely there’s more info than in your post, but to me it sounds he worries about your condition and tries to think ways to prevent your condition from worsening. Illnesses are tough for love ones because they make them feel useless (thus, overcompensation by caring) and because the behavior that may worsen the condition is just in control of the person with the condition (which furthers the micromanaging).
In your case it’s sounds as a case of exactly this. I don’t think it’s possible for him to not do it at all because that would mean he’s not caring. What I think it would help you both is:
Understand where he’s coming from and don’t perceive it as him not believing you’re capable of making your decisions.
Tell him how to show his care for you. Don’t say nothing. Think of things you need or that would be beneficial for you.
Some of his micromanaging can be helpful when you’re not following the best treatment, diet, exercise, sleeping habits, or whatever applies to your condition.
I think this is something you need to talk to your therapist about. Specifically communication tactics that don’t involve sulking, and maybe exploring why this incident set you off in the first place. Good luck.
