You might need to throw your bf a bone here. Male personal trainers have a bit of a rep for seducing their clients and being inherently untrustworthy. It’s a career that many men choose just to meet women and I’d wager more than a few personal trainers would tell you they met their s/o at the gym. While acknowledging that this can’t be true for all of them and anecdotal evidence is anecdotal, I can see how it would ease your bf’s mind if you didn’t choose a straight male trainer.
I understand your position that this was all his idea in the first place, but apparently he's changed his mind and wants to be monogamous now… so if you don't want to do that, maybe this relationship is over. To me, an open relationship is a “two yeses” situation, and you've got one yes and one no.
