Is there a way I can express my feelings without him getting defensive?
Him getting defensive is his way of telling you he doesn’t care about your feelings. It doesn’t matter if he has a lot going on in his life, it’s not an excuse to be an asshole to people. In a healthy relationship, you should be able to communicate your feelings (good and bad) and expect to have a conversation about it. If he’s giving you the silent treatment and ignoring you for days, then trying to turn the tables around saying it’s your fault, he’s showing you that he doesn’t care how you feel.
If I were you I’d be thinking long and hot if this is truly the man you want to spend the rest of your life with. A man who doesn’t respect you and your feelings, a man who obviously doesn’t care that he hurts you because he’s got “a lot going on”. Honestly, I don’t think I’d waste another minute on a man who doesn’t give a rats behind if he hurt me emotionally, and I definitely wouldn’t be going from fiancé to wife with him.

Have you tried therapy or counselling ?
Honestly, I don't think people should legally be allowed to date or marry without it, at best it'll teach you how to communicate your feelings effectively.
