I think that it is probably reasonable to both learn the lesson about consent AND break up with her. If you've had 6 or 7 relationships already then there isn't a shortage of humans you are able to connect with.
Take that lesson about consent with you into relationship 8 and beyond but let this one go. She's not ready to date yet and that's OK.
Sounds like you're husband may be suffering from post-partum depression. Yes, men can have it. Have a read up on it. Encourage him to speak to a mental health specialist but try not to push it. All the best.

Just be careful about the “sick” part because some kids then think (extrapolate in a way only kids can) that getting sick = dying. Or going to the hospital = dying. There are some really good children’s books on death—I bet if you called her school librarian they could set you up with a couple.
Generally speaking (as I had to do this a lot working in veterinary medicine when a family pet was euthanized) saying something like “so and so was very sick and the doctors tried very hot to help but it wasn’t enough.” Vs “so and so was sick and died.”
I’m sorry you’re in this difficult position. If they do a celebration of life then I’d take her, that should be pretty benign.
