No means no and does not require elaboration. It does not matter if you’ve had previous sexual history with a person or not. Just because you were horny does not mean you can try to pressure her into sex when she had already said no. You were disrespectful, crossed her boundaries, and your behavior was a dealbreaker. You broke her trust by repeatedly trying to coerce her into doing a sex act she didn’t want to do. “Sex brain” is a flimsy excuse for this behavior. I am honestly disturbed by how much you are downplaying what happened and your lack of accountability. To put it bluntly, you come across as a kind of rapey selfish sex partner with a lack of self awareness. Her response of cutting ties with you was not harsh, it was appropriate. Between this and the veganism, it is clear you two do not share the same standards of ethics and morals which is a key element for a successful relationship.

The way I had something similar happen to me. It's crazy the lengths people will go to break up something or get at you. Although in my case, it turned out that my former partner was self projecting as well and had cheated on me rip.

Also sounds like and from her actions described by him bipolar disorder. My nephew dated a woman who was bipolar and it was a chaotic relationship at best. Depending on the depth of your feelings for her you have two choices. Get her to see a Dr, get diagnosed and get on meds, if this isn't an option for you or she won't do it, cut your losses and beat feet because if not you're in for a horrible time.

You need to be patient with yourself. It will take a lot longer than two months.
You may also need to start afresh for awhile – figure out who YOU are. You have made her a part of your identity, and as a result, you never became whole as an individual, which is why you feel so empty.
