I know someone a bit like that who has an eating disorder; in their case it's kind of secondary after they managed to give up alcohol and weed addictions. But I think there is a larger danger lurking here. You are both generous and but only you have financial means to do so in that way. She isn’t used to that. But, more than that, you likely value money differently. You might see three nights at $400 a night as a fun splurge; she might that as her food budget for several months. But seriously, these tests aren't completely accurate, so before you accuse a family member of cheating, you may want to look into the accuracy of them (from 3rd party sites, because the trading company will of course tell you it's accurate).
People absolutely can change, and I always resist judging a person solely by the worst things they've ever done. People can do bad things and still be worthy of love. But there is a big difference between supporting a friend or family member who's trying to better themselves, and straight-up using yourself as a guinea pig to test how much someone has changed.
Maybe this dude is worthy of redemption, but it's not OP's job to risk her life to find out. Women die at the hands of men who swear they've changed. It happens all the time.
