I see where his parents may feel blindsided. SiL should have spoken to the parents first and let them know in advance about the person she is bringing home to meet them. I feel like this would be normal in any relationship regardless if it is hetero or not. Especially if the parents are super religious. But this is as far as my understanding towards the parents goes.
The parents are absolutely in the wrong for their extreme reaction and behaviour. If they were shocked, they should have sat there quietly and been polite to their guest and then have a conversation with SIL after.
As for your husband, he is probably surprised that SIL is gay but not surprised at how his parents reacted. That's why he's so nonchalant about his parents' reactions.

YUP. Always shutting down the conversation and leaving you whenever you try to express your dismay or question his behavior is a control tactic.
