You know what you are to blame for? Allow this to continue. Showing him that he can do whatever he likes and he has no consequences.
You are also to blame for making excuses as to why its ok for him to continue the behavior.
The only person to blame for this guy taking advantage of you, is you.
You should do what's best for the dog. If a behaviorist or trainer hasn't been able to help the dog and your fiancé get along, then you should rehome the dog before he bites your fiancé further. Your dog is clearly afraid of your fiancé and reactive. That doesn't mean your fiancé has done anything recently, but his treatment of the dog in the puppy stage was traumatic enough that the dog bit him.
Unless your fiancé is willing to do serious training with the dog at a training facility that has a reactive dog trainer, rehome the dog. He doesn't deserve to live in fear anymore than your fiancé does.
I think that comes down to you. Are you going to be tempted to check up on her, see what she’s doing, text her, beg for her back, etc…. If so then I’d say you should block her and delete everything.
If not, then it’s fine to keep her info. It doesn’t really hurt you to. Unless you want absolutely nothing to do with her, in which case you can delete it all so she doesn’t reach out
