IMHO, in memory of the person who she was, who is metaphorically deceased now, you might want to just bite the bullet and consider the money lost.
You really need to stay away from the new person. That’s not the person anymore. You did the right thing by cutting off & getting out. That needs to be 100%.

Here's why this weird: He could have gone in your bathroom for 10 minutes and then came back out like he pooped. You would've never known the difference. He wanted you to know.

I'm honestly, (and surprisingly) on the GF's side. It's impossible to be in love with someone for so long and legitimately get rid of those feelings so quickly. Plus you violated a boundary.
The issue is that it's going to be impossible for your GF and maybe your friend as well, to discern how your behavior from when you wanted to court your friend from how you are now. Honestly, just let your gf go, since you obviously can't prioritize her. There's nothing wrong with this now but now that you're faced with this choice and obviously can't choose you have to do what's fair for your gf.
If the time between the confession was much longer then I'd say your gf is out of line, but you didn't actually get over your friend you just moved on to your gf and she most likely feels like a rebound since you aren't prioritizing her (more than understandable) feelings.
Two choices, lighten up or find a devout catholic to marry.
