“Gold diggers” are not interested in young men in their 20s who can afford to take them to an Olive Garden ffs. That's not gold. If you are that worried about it just make sure you either split the bill or take turns paying.
Stick with the facts on specific observable behaviors on what you found unacceptable. Keep it brief. This is not a conversation. This is the boss terminating a poor performing employee. Don't mix friendship with work. This is you livelihood; blood, sweat and tears. You are invested. She is not.
Make it formal and business-like. Give her termination notice in writing (check with an HR knowledgeable person to insure the correctness of the wording/content) to convey the business-like severity, gravity, and finality of the termination.
Don't get sucked in to justifying, arguing and bringing in friendship. Keep it brief. You might even want to have your Head of Office there as well.
