You should text him to pay attention to his wife and kid instead of harassing you during your time. He being controlling about the the times because that’s his window to sneak.
Having a company to go together to the gym can be great idea , to put him in the mood more … I also have a gym membership, I usually go maybe once every month , but if I have a company it would be better to improve the mood … try offer him that and find someone to watch the kids for like couple hours.
It's not “controlling” to ask for reassurance when a huge red flag has been thrown up. Almost anyone innocent would want to do what they can to prove their innocence to their partner and reassure them. I say “almost” because some people are very private with their stuff at all times, but you would know if she's always been super-protective of her phone privacy or not.

Option 1, but at the wedding party, drop a banner with the date you got married. The two of you can say, we were going to have this get together earlier, but there was a pandemic and everything went sideways!
