You have your dates out of town/city where your child or family aren't likely to catch you (especially if you have traditional catholic parents).
That's like a cheating wife taking her lover to the local hardware store or sporting goods place (or someplace your spouse will hang out at) and expect not to be caught.
Go to therapy and discuss why he is so insecure with you. It’s normal to have some insecurities, but this extent is majorly unhealthy and controlling. It’s very concerning that he wants to keep you home to prevent you from cheating.

Sounds like a pretty significant incompatibility to me. You either need to be 100% Ok with this or say goodby.
He might change his mind back, but might switch back to religion again. You can’t control his desire to be religious or tradition bound. You can only control what you do about it.
