This guy is so respectful and honest that he feels compelled to share his feelings with her. And she deserves better? 99% of guys out there would keep their mouth shut out of fear.
But your advice is to leave his girlfriend, rather than have open, and honest communication about his feelings with her.

I don't think you're the asshole here. It's awesome that she goes to therapy and that she's proud of your relationship. It's true that her past does not inform her future. But, she needs to stop bringing up the past herself. She invites the cycle to play out over and over again in her head. Perhaps a gentle nudge to her to speak to her therapist about it if she doesn't feel comfortable talking to you.
With the fighting, that's stupid. She wants you to get arrested because some guy talked shit? That's not good. Maybe you could have had a conversation with the guy who offended her but that fighting shit is dumb as fuck. If she's going to expect you to fight anyone who offends her, she may be with the wrong guy.
Sounds like a conversation is in order. Reinforce how proud you are that she's with you.
