First of all, you're wrong. Secondly, what does this have to do with OP's issue?
Yes, unfortunately women have it drilled into them from a young age that pubic hair on women is gross/“dirty” and that vaginas smell like fish/meat (“beef curtains”). So it’s not surprising that she’s super self-conscious about this, and I’m not sure what you can do about it, short of what you’re already doing – reinforcing that you love her and want her and think she tastes great regardless etc.
Maybe, as a first step, she would be willing to let you go down on her right after a shower? Or she could modify her diet by eating more fruit? (I’m not sure if that’s been scientifically proven, but supposedly the more fruit you eat, the better you taste!)
She could also consider therapy or sex therapy to help her work past this issue if it’s really becoming a problem.

But like… why do you need a gap year if you have someone supporting you? Also gap “year” statistically turns into years. My mother is “in the middle of her degree she’s just taking a gap year to relax” she told that to everyone and her gap year is 25+years and counting oh! And it was a one semester “in the middle” into her degree when she took the “gap year”
Do you know she's not also married? Has she done anything inappropriate? Is really not that unusual for people to be friendly.
If you don't want to make it weird, don't bring up some assumed crush like it's something you need to address. If she legitimately crosses a line abs gets personal, that's one thing.
